Aloo Gobi is a vegetarian dish made with potatoes, cauliflower, spices, and herbs. It is a Hindi word. It is often used in India, Nepal, Pakistan, and most of the country's cooking. Due to the usage of turmeric, it has a yellowish hue. It makes a dish that is wonderfully luscious and rich and is personally my favorite version. It includes a thick vegetarian gravy made mostly with tomatoes. This curry can be made in numerous ways. This Aloo Gobi Recipe, which is a tad spicy and fuller in flavor, is what I'm offering today. The cauliflower and potatoes  are cooked in ginger, garlic, and a variety of other spices. It goes wonderful with steamed Rice and lentil soup, paratha, or roti. Let's jump into the recipe👇👌

Ingredients


Cauliflower: 1 cauliflower cut into florets 
Potato: 2 potatoes, cut into 4 to 6 pieces. 
onion: 1 large onion paste
Ginger: 1 teaspoon grated Ginger.
Garlic: 4 to 5 cloves
Turmeric: ½ tsp.
Cumin seed: 1 tsp. 
Garam masala: 1 tsp. 
Tomato: 2 tablespoons tomato puree
oil: 2 tablespoons mustard oil
Green chilli: 1 halved lengthways
Coriander: a handful of coriander, roughly chopped.
Ghee: 1 tsp.


Instructions for Making Aloo Gobi Recipe

1.Put saucepan on flame of gas and heat 2 tablespoon oil in a saucepan.

2. Add 1/2 teaspoon cumin seeds and let them spit. Then add green chilli.

3. Then add 250 gm chopped cauliflower florets and 3 large potato cut into 6 pieces.

4.Now fry both for 5min and add little bit turmeric and salt.

5.Then add the paste of onions and tomato puree in it.

6.stir the onion paste and tomato puree on medium flame.

7. Now add 1.5 teaspoons of crushed ginger-garlic.

8.Keep the flame low. Then add ¼ teaspoon turmeric powder, ½ teaspoon Kashmiri red chilli powder and 1 tsp garam masala. salt according to taste

9. In low flame ,mix the spices very well until it turns brown in color.

10. Mix the cauliflower and potato very well with the masala.

11.When spices start to release oil then add 1 tsp ghee. Then add 1 cup of water in it or add as required.

12. Cover the saucepan with a lid and cook the cauliflower and potato gravy on a low to medium flame till the cauliflower and potato is cooked and tender.

13. Check regularly, and if the water is drying out, add extra water.

14. Turn off the flame once the cauliflower and potatoes is finished cooking. The dish will include some gravy.

15.Add 2–3 teaspoons of chopped coriander leaves last to garnish it. Mix well.

16. Accompany Aloo Gobi Gravy with chapatis, naan, or parathas and steam rice and lentil soup.

Both potatoes and cauliflower can be healthy additions to your daily diet. But when compared to potatoes, cauliflower has some benefits, such as having fewer calories and carbohydrates. Additionally, because of its adaptability and nutritious profile, cauliflower typically wins out.
