Ingredients of Dum Aloo


The ingredients you will need for a basic dum aloo recipe are:
Oil: 3 tablespoons of oil
Potatoes: 10 to 15 baby potatoes
cumin seeds: 1 teaspoon
Cloves: 5
Black pepper: 8 pieces
Cardamom: 2 small, 1 big
Cinnamon: 1/2 inch
Turmeric powder: 1 tsp.
Kashmiri red chili powder: 1 tsp
Cashew: 10
Curd: 2 tablespoons
Onion: 2; cut into slices.
Green chilies: 2 , finely chopped
Ginger: 1/2 inch
Garlic: 8 cloves
Tomato: 2, finely chopped
Salt to taste
Coriander leaves, for garnish

Step-by-step instructions for how to make Dum Aloo 


Step 1: Start by boiling the small potatoes in a pressure cooker of water with a pinch of salt. Wait for the first whistle. Once they are undercooked, peel them and poke holes in them with a toothpick or fork.

Step 2: Take a bowl and put boiling potatoes in it. Add 1/4 teaspoon turmeric powder and 1/2 teaspoon salt. Mix them nicely with the potatoes.

Step 3: In a kadai, heat 2 tablespoons oil. Add the potatoes and sauté them on all sides until they are brown in color.

Step 4: In the leftover oil, add slices of onions, chopped ginger, garlic, all the whole spices, green chili, and cashews. Sauté it until it turn golden brown.

Step 5: Take out the sauté items from the kadai and leave them to cool down. When it cools down, grind it in a mixer grinder and make a smooth paste.

Step 6: Heat 1 tablespoon oil in a kadai and add the smooth paste of spices, chopped tomatoes, 1/2 teaspoon turmeric powder, 1 teaspoon chili powder, and salt to taste. Mix everything together and sauté it for a few minutes. When the oils begin to emerge from the masala, reduce the heat and add the curd. Stir continue and cook for two minutes.

Step 7: Add 2 cups of water and small sauté potatoes in it and mix everything together. Cover the kadai with a lid and cook for 8–10 minutes on low heat.

Step 8: Once the potatoes are cooked, combine them with the chopped coriander leaves.

Step 9: Serve hot dum aloo with chapatis, puri, and steamed rice and lentil soup. Enjoy!
