Ingredients

Mutton: 1 kg, cut into cubes
Onion: 500 g, cut into slices
Garlic paste: 1 teaspoon
Ginger: 1 teaspoon, crushed
Dry red chili: 2
Bay leaves: 2
Cumin: 1 teaspoon
Cloves: 12
Black pepper: 10
Cinnamon: 1/2 inch
Cardamom: 3 small, 2 big
Coriander seeds: 1 teaspoon
Kashmiri red chili powder: 3 teaspoons or according to taste.
Turmeric powder: 1 teaspoon
Oil: 4 tablespoons
Salt to taste


To be blended: 

Add all the whole spices to the mixer grinder and make a paste. Keep it aside.

Instructions for making Dhaba style mutton curry

Step 1: Wash the mutton cubes only twice.

Step 2: Heat oil in the pressure cooker on medium high heat.

Step 3: Add a half teaspoon of cumin seeds and bay leaves to it and let them crackle.

Step 4: Add onion slices and sauté them for 2 minutes.

Step 5: Add the mutton to the onion and stir it. Add 2 teaspoons salt and 1/2 teaspoon turmeric, and cook for 5 minutes on medium heat.

Step 6: Add a ground paste of spices, crushed ginger, and garlic paste to it and add Kashmiri red chili, turmeric, and salt to taste. Mix them properly.

Step 7: Cook it for 7 to 8 minutes. Stir it at intervals.

Step 8: Add 1 cup of water to it. Cook the mutton on medium-low heat with only the lid on the cooker for 20 minutes. At intervals, stir it. This is called the slow cooking method.

Step 9: After 20 minutes, check whether it is done or not. If it is cooked, switch off the flame.
