Onion: 5 big
Tomato: 1 big
Green chili: 1 cut into two slices
Curry leaves: 1

Garlic and ginger paste: 2 tsp.

Instructions for Making Simple Egg Curry Recipe

Step 1: Put every ingredients on your kitchen slab.

Step 2: Put water and 1 teaspoon salt in a saucepan to boil eggs over medium flame. Leave it for 10 minutes.

Step 3: When the eggs are boiling, on the other side, Add 3 cups of water, slices of onion, 1/2 teaspoon turmeric powder, and 1/2 teaspoon salt into the pressure cooker. Close the lid of the cooker and set it to medium heat. Wait for five whistles.

Step 4: After the fifth whistle, put out the flame of the gas. Now pour the onions from the cooker into a bowl and blend the onions into a smooth paste. Keep it aside.

Step 5: Take a mixer grinder and put all the whole spices in it; make a paste. Keep it aside.

Step 6: Heat 3 tablespoons of oil on high in a kadai. Add boiled eggs to it. You can make cuts or poke holes with help of toothpick in the eggs. Sprinkle two pinches of turmeric powder in it. Now sauté it nicely from all sides until it turns brown in color.

Step 7: Take out the fried eggs from the kadai.

Step 8: Add 1/2 tsp. cumin seeds, green chili, and curry leaves to the leftover oil.

Step 9: When it starts splitting, add ground spice paste, chopped tomato, 1/2 tsp turmeric powder, 1 tsp chili powder, 1.5 tsp salt, or according to taste, and 2 tsp. ginger garlic paste into it. Sauté the masala nicely until oil comes out of it.

Step 10: Now, add smooth onion paste, to it. Stir and sauté it for 5 minutes.

Step 11: After 5 mins add 3 cups of water to it and close the lid of the kadai for 5 mins.

Step 12: Add fried eggs to the gravy. Stir and cook for 5 mins so that the flavor comes into the eggs.

Step 13: Now the delicious egg curry is ready. Garnish it with coriander leaves. You can enjoy it with steamed rice, roti, and paratha.
